Forman & Son – our trusted supplier of the finest London Cure Smoked Scottish Salmon, to witness their craftsmanship firsthand.
Founded on over a century of tradition, this world-renowned London Cure Smoked Scottish Salmon is kiln-dried and cured on Fish Island and enjoys a unique status as London’s only food with Protected Geographical Indication.
Their process has barely changed in 100 years, and that’s what makes it so special. Uniquely mild and with a hint of oak smoke, this Grade One Scottish salmon is cured with just salt (no sugar or artificial additives) and every process (filleting, salting, slicing, and packing) is carried out by hand by skilled artisans. In addition to this, H. Forman & Son follows a zero-waste process, ensuring that every part of the fish is used responsibly and sustainably.

Our visit began with a warm welcome from the H. Forman & Son team with a talk about their heritage and traditional techniques, then followed by a tour through the smokehouse. One of the highlights was watching the skilled Chef slicing the salmon in action – a job that takes years to master. We finished the visit with a delicious smoked salmon tasting.
